Roaches on the cook line and prep table lead to temporary closure of Broward restaurant

Below is a list of places that were inspected last week by the Florida Department of Business and Professional Regulation.

Records show Cabo Blanco was the only place in South Florida that was ordered shut.

Cabo Blanco was allowed to re-open following an ordered cleanup and a re-inspection.

“Roach activity present as evidenced by live roaches found. Observed approximately 6 live roaches under tin foil of bottom shelf of prep table on cook line in kitchen. Observed 2 live roaches inside of wheel of cook line flip top. Observed 4 live roaches inside of door gasket of cook line flip top.”

“Dead roaches on premises. Observed approximately 10 dead roaches in ground on cook line in kitchen Observed 1 dead roach on top of tin foil lined bottom shelf of prep table on cook line in kitchen.”

“Food-contact surface soiled with food debris, mold-like substance or slime. Soda gun soiled at bar.”

“Floor soiled/has accumulation of debris. Observed under cook line equipment and at bar.”

“Raw animal food stored over/not properly separated from ready-to-eat food. Raw shrimp stored above ready to eat onions in reach in cooler.”

“Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. cooked chicken (80F - Hot Holding) being held in oven with minimal heat.”

“Handwash sink not accessible for employee use at all times. Total lack of water at kitchen hand wash sink.”

“Required employee training expired for some employees.”

“Dead roaches on premises. At least 3 dead roaches on boxes in bag-in-box cabinet in dining area. Operator began removing and sanitizing the area. Repeat Violation.”

“Floor soiled/has accumulation of debris. Under all shelving in dry storage. Repeat Violation.”

“Bowl or other container with no handle used to dispense food. Rice on cook line.”

“Employee handled soiled dishes and utensils and then picked up clean plates without washing hands.”

“Server handled soiled utensils and then prepared a beverage for customer without washing hands. Reviewed proper hand washing and employee properly washed hands. Repeat Violation.”

No items prepped or portioned today. See stop sale. Cook line - open top unit - cheese (70-75F); cream cheese (75F). Per operator items placed in unit approximately 2 hours ago from walk in cooler. No items prepped or portioned today. Operator moved items back to walk in to quick chill. Repeat Violation.”

“Hand wash sink not accessible for employee use at all times. Hand sink by dish machine blocked by large tub filled with food containers.”

“No currently certified food service manager on duty with four or more employees engaged in food preparation/handling.”

“Proof of required state approved employee training not available for some employees.”

“No soap provided at hand wash sink.”
