The inspection, conducted on Feb. 18, 2025, by the Florida Department of Agriculture and Consumer Services, revealed serious concerns related to sanitation, food safety and pest control at the bakery’s Miami location.

The bakery is located at 9825 SW 40th St. (Bird Road)

According to the food safety inspection report, live roaches were seen crawling on the underside of preparation tables and beneath cold storage units.

Dead roaches were also found on glue traps throughout the food processing and ware washing areas.

A “stop-use order” was issued for all open food processing and handling areas, including the stove, ovens, slicer, and ware wash sink. Additionally, inspectors noted gaps in the exit door near the ovens, which could allow pests to enter the facility.

The bakery must implement a pest management control program before a re-inspection.

The inspection also documented multiple food safety violations that could lead to foodborne illnesses.

Employees failed to wash their hands before food preparation after handling soiled equipment, and after touching bare body parts. Employees also wore soiled gloves and wiped them on their aprons instead of changing them between tasks.

A food employee was observed handling ready-to-eat lemon meringue pastry shells with bare hands, leading to an immediate stop-sale order and disposal of the affected items.

Equipment and utensils were washed and rinsed without being properly sanitized before use.

Inspectors also found multiple instances of food being stored at unsafe temperatures.

Several food items, including spinach quiche, cheese quiche, and ham and cheese croissants, were found at temperatures as low as 60°F, far below the required 135°F for hot-held food. These items were discarded during the inspection.

According to the report, butter was left on a preparation table at 67°F, well above the safe limit of 41°F. The butter was immediately used in cooking to prevent waste.

A package of sliced ham in the walk-in cooler was found with an incorrect date mark, which could lead to the consumption of expired or spoiled food, the report stated.

Atelier Monnier has until March 4, 2025, to correct these violations. Failure to do so may result in fines, suspension, or revocation of their food permit.

Additionally, the bakery must request an official re-inspection to confirm compliance before resuming full operations.
