Rodent issues found in 3 Sawgrass Mills restaurants, roach discovered in beans at another establishment

PEMBROKE PARK, Fla. – Below is a list of places inspected last week by the Florida Department of Business and Professional Regulation.

All the places mentioned were allowed to re-open following an ordered clean up and then a re-inspection.

“Stop Sale issued on time/temperature control for safety food due to temperature abuse. Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. True Reach in Vegetable Cooler- Cooked Meatballs (50F - Cold Holding); Pikliz (55F - Cold Holding). Per Manager food items in unit overnight. Items not prepared or portioned today.”

“Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Lower shelf of True Reach in Cooler soiled with food debris.”

“Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed low boy cooler gasket soiled with an accumulation of black mold like debris across from steam line in kitchen.”

“Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in flip top cooler across from steam line in kitchen, fried chicken (42-48F - Cold Holding). Per operator, items were placed in cooler at the start of operations prior to inspection. Item has been out of temperature for approximately 1 hour. Item placed in low boy to rapid cool.”

“Raw animal food stored over/not properly separated from ready-to-eat food. Observed cooked duck stored under raw duck in walk-in cooler next to back exit door.”

“Dish machine chlorine sanitizer not at proper minimum strength. Discontinue use of dish machine for sanitizing and set up manual sanitization until dish machine is repaired and sanitizing properly. Observed dish machine less than 10 ppm.”

“Hand wash sink plumbing uninstalled from sink next to flip top cooler across from cook line. Must be reinstalled in the same location where uninstalled.”

“Required employee training expired for all employees.”

“Dish machine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dish machine is functioning properly.”

“Single-service articles not stored inverted or protected from contamination. Observed glass plates soiled with grease above steam table in the kitchen.”

“No soap provided at hand wash sink.”

Operator placed items in walk in cooler.”

“Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed pot of rice stored next to main wok station - yellow rice (81F - Hot Holding) as per operator item held out of temperature for less than an hour. Operator placed in walk in cooler.”

“No proof of required state approved employee training provided for any employees.”
