Roaches found in beans, mold on cheesecake at South Florida restaurants

PEMBROKE PARK, Fla. – Below is a list of places recently inspected by the Florida Department of Business and Professional Regulation.

According to state records, five were ordered shut. Follow-up inspections were ordered on others below.

All the places mentioned were allowed to re-open following an ordered clean-up and a re-inspection.

“Rodent activity present as evidenced by rodent droppings found. Observed approximately 40 rodent dropping behind reach in freezer in kitchen area. Also observed over 40 rodent droppings on preparation table next to raw chicken in kitchen area. Also observed 10 rodent droppings on glass plates on preparation table and observed 10 on dry storage shelf with onions, and powder beverage in kitchen area.”

“Dead roaches on premises. Observed 1 dead roach in kitchen behind reach in freezer. Also observed 3 dead roaches in rat trap near 3 compartment sink in kitchen area. Observed 1 dead roach near reach in freezer chest in kitchen area.”

“Pesticide/insecticide labeled for household use only present in establishment. Observed 1 bottle of raid stored in dry storage area.”

“Objectionable odors in bathroom or other areas of the establishment. Observed objectionable odor throughout entire establishment.”

“Plumbing system in disrepair. Observed water leaking from three compartment sink into metal container.”

“Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed employee touch phone then proceed to cook.”

“Equipment in poor repair. Observed hood filters broken in kitchen. Also observed all reach in coolers in establishment maintaining an ambient temperature of above 50F.”

“Stop Sale issued on time/temperature control for safety food due to temperature abuse. Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Raw Shrimp (50F - Cold Holding); Chicken Gizzards (50F); Chicken (52F - Hot Holding). As per operator, they were placed in the reach in cooler the previous day. Repeat Violation.”

Observed at Dishwasher (Chlorine 0ppm). Advised operator stop use of dishwasher and to set up and utilize three compartment sink to sanitize dishes.”

“Wall soiled with accumulated grease, food debris, and/or dust. Observed at cook line. Repeat Violation.”

“Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed interior of microwave soiled with food debris.”

“Floor soiled/has accumulation of debris. Observed behind and under cook line equipment soiled with grease build up. Repeat Violation.”

“Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed ceiling tiles soiled throughout kitchen.”

“Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed ground beef (51 F - Cold Holding); mashed potatoes (52 F - Cold Holding); octopus (49 F - Cold Holding); cooked shrimp (49 F - Cold Holding) at standing reach in cooler bakery station.”

“Bowl or other container with no handle used to dispense food. Observed a single service container without handle stored inside of desert.”

“Buildup of food debris/soil residue on equipment door handles. Observed reach in coolers door handles soiled at bakery station. And microwave door handles soiled.”

“Nonfood-grade bags used in direct contact with food. Observed octopus and shrimp stored inside of thank you bags at reach in cooler bakery station.”

“Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw fish stored over cut onions at reach in cooler at bakery station. And observed raw fish stored over cooked pasta at walk in cooler.”

“No soap provided at hand wash sink at preparation area.”

“Accumulation of dead or trapped birds, insects, rodents, or other pests, in control devices. -Prep area; approximately 2 dead roaches in sticky trap on wall next to knife magnetic storage. Operator discarded. -Prep area; Approximately 8 dead roaches in sticky trap under slicer. -Front cook line behind flip top cooler 2 sticky traps; one containing approximately 5 dead roaches in sticky trap. The other containing approximately 3 dead roaches in sticky trap.”

“Stop Sale issued due to food not being in a wholesome, sound condition. 1 dead roach and 2 live roaches found in the bin of dry red beans. The dry red beans were discarded.”

Observed at walk in cooler - sliced ham (48F - Cold Holding); French onion soup (46F - Cold Holding); minestrone soup (46F - Cold Holding); cooked chicken (46F - Cold Holding) as per operator items held out of temperature for over 4 hours, items not portioned or prepared today.”

“Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed employee handling dessert shells with bare hands. No heat was applied to dessert shells prior to be displayed for sale.”

“Employee touched soiled surface and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed employee texting on cell phone. Proceeded to engaged in food preparation without washing hands nor glove change.”

“Hand wash sink used for purposes other than handwashing. Observed handwashing station used for dumping at front next to expresso machine. Repeat Violation.”

Editor’s Note: Local 10 News initially reported that inspectors observed a slice of tilapia with mold-like growth in the display case of Tilapia Fresh Fish and Chicken. The report has been corrected to show that it was actually cheesecake found with mold-like growth.
