Galbi Marinated Skirt Steak & Tofu Skewers
For the skewers:

Galbi marinade (recipe below)
1 pound skirt steak, any excess silver skin removed
1 block firm tofu
skewers, soaked if using wooden skewers
Make the Galbi marinade and marinate the skirt steak overnight. Reserve a little marinade for brushing the tofu the next day.
Open and drain the tofu. Wrap in a lint-free towel or paper towels. Press overnight in the refrigerator by sandwiching between two dishes and weighing down with cans or a heavy jar.
The next day, cut the marinated steak in thick strips. Cut the tofu into chunks. Skewer the steak and tofu chunks. Brush the tofu with the reserved Galbi marinade. Grill the steak skewers until your desired doneness. Serve with your favorite sides.
For the Galbi marinade:
8 ounces kim chee base
2 tablespoons Dijon mustard
4 cloves garlic, minced
2 tablespoons peeled and minced ginger
Ā¼ cup brown sugar
Combine all ingredients in a blender and puree until smooth.
