300 grams all-purpose flour

50 grams Dutch process cocoa powder, sifted

1 teaspoon kosher salt

¾ teaspoon baking soda

225 grams unsalted butter, at room temperature

200 grams brown sugar

100 grams granulated sugar

1 large egg, at room temperature

1 teaspoon vanilla bean paste or vanilla extract

granulated Sugar, for rolling

Preheat your oven to 350˚F. Line three baking sheets with parchment paper.

Sift together the flour, cocoa powder, salt, and baking soda.

In the bowl of a stand mixer fitted with the paddle attachment, cream the butter, brown sugar and granulated sugar until light and fluffy, about 3-4 minutes. Add the egg and vanilla, beat until combined. Add the dry mixture and beat on low until just incorporated.

Using a cookie scoop about that about 2 tablespoons, portion balls of cookie dough. Use your hands to shape the dough into a ball and in granulated sugar until well coated. Transfer to the prepared baking sheet, leaving 2-3 inches between cookies.

Bake one tray at a time for 11-12 minutes, until the cookies have puffed up and are beginning to crack on the tops, and the edges are set. Remove from the oven and allow to cool on the baking tray for 15 minutes then transfer to a wire rack to cool completely.
