Americano Panini
For the bread:

-English muffin
For the Panini:
-sun-dried tomato mayonnaise (recipe below)
-honey-maple turkey or similar, thinly sliced
-Swiss cheese, thinly sliced
Preheat your panini press.
Open the bread and spread a little sun-dried tomato mayonnaise on both sides of the bread. Layer a few slices of turkey and Swiss cheese on the bread. Close the sandwich and place in the panini press. Press until golden brown. Serve while warm.
For the Sun-dried Tomato Mayonnaise:
-½ cup sun dried tomatoes, drained of any juices or oil
-1 teaspoon minced garlic
-1 teaspoon Calabrian chili spread
-1 tablespoon olive oil
-heavy pinch salt
-1 cup fresh basil leaves, lightly packed
-1 cup mayonnaise
Combine the sun-dried tomatoes, garlic, Calabrian chili spread, olive oil, salt and fresh basil leaves in a food processor. Run the food processor until the mixture is pureed. Stir the puree into the mayonnaise. Taste for seasoning, adjust if desired.
