Granola with Papaya, Mangoes & Greek Yogurt:
For the Granola:

-2 cups old-fashioned oats
-2 tablespoons chia seeds
-2 tablespoons flax seed
-2 tablespoons sesame seeds
-¼ cup sunflower seeds
-¼ cup coconut flakes
-¼ cup pepitas (pumpkin seeds)
-2 tablespoons brown sugar
-¼ cup extra virgin olive oil
-⅓ cup honey
-heavy pinch kosher salt
-½ teaspoon ground cinnamon
-2 teaspoons vanilla extract or vanilla bean paste
For serving:
-papaya, peeled and cut into chunks
-mangoes, peeled and cut into chunks
-Greek yogurt
-honey, for drizzling
-preheat your oven to 350˚F.
Combine the oats, chia seeds, flax seed, sesame seeds, sunflower seeds, unsweetened coconut flakes and pepitas in a large bowl.
Combine the brown sugar, extra virgin olive oil, honey, kosher salt, ground cinnamon and vanilla in a separate bowl. Whisk together. Transfer the wet ingredients into the dry mix and stir well to make sure everything is evenly coated and mixed.
Transfer the prepared granola to two rimmed baking sheets, dividing the mixture evenly between the two sheets and spreading the granola into an even layer. Bake for 20-25 minutes, until golden brown. Stir the granola every 7–10 minutes to ensure it browns evenly.
Allow to cool enough to handle, break up into smaller pieces while still a little warm. Store in an airtight container once completely cool.
Serve with a spoonful of Greek yogurt, your favorite fruit and a drizzle of honey.
