Pineapple Mojitos
-¾ ounce lime juice, freshly squeezed

-½ ounce of pineapple simple syrup, or more to taste (recipe below)
-6-8 mint leaves
-2 ounces white rum, like Bacardi
-soda water, to top
-Ice
-pineapple wedge for garnish
Combine the lime juice, pineapple simple syrup and mint in the glass. Muddle together. Add the rum and fill the glass with ice. Stir. Top with soda water and stir again. Garnish with a pineapple wedge.
Equipment:
-muddler
-Collins glass or similar
For the Pineapple Simple Syrup:
-1 cup water
-1 cup granulated sugar
-2 cups pineapple chunks
Combine the water, sugar and pineapple chunks in a small pot. Bring to a boil, reduce to a simmer and cook until the sugar has completely dissolved and the pineapple starts to break down. Remove from the heat, let steep for 1 hour (or longer if you have the time.) You can store the simple syrup with the pineapple chunks to help build flavor. Strain before using.
